Pineapple Upside Down Cake

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 1 small can pineapple ring, drained
  • 125 g margarine
  • 125 g caster sugar
  • 2 eggs
  • 100 g self raising flour
  • 1 teaspoon baking powder

Recipe

  • 1 preheat oven to 180c (gas mark 4).
  • 2 line and grease an 8 inch cake tin.
  • 3 arrange pineapple rings onto the base of the tin.
  • 4 melt together 25g of the margerine and 25g of the caster sugar and pour over the pineapple.
  • 5 beat together all the remaining ingredients until fluffy and smooth and spoon over the fruit.
  • 6 bake for 25-35 minutes and serve hot or cold with custard, cream or ice cream.
