Pineapple Upside Down Cake

Ingredients
- 1 small can pineapple ring, drained
- 125 g margarine
- 125 g caster sugar
- 2 eggs
- 100 g self raising flour
- 1 teaspoon baking powder
Recipe
- 1 preheat oven to 180c (gas mark 4).
- 2 line and grease an 8 inch cake tin.
- 3 arrange pineapple rings onto the base of the tin.
- 4 melt together 25g of the margerine and 25g of the caster sugar and pour over the pineapple.
- 5 beat together all the remaining ingredients until fluffy and smooth and spoon over the fruit.
- 6 bake for 25-35 minutes and serve hot or cold with custard, cream or ice cream.
