Ingredients
- 2 lbs raw potatoes, peeled
- 1 tablespoon salt
- 2 tablespoons flour
- 3 eggs, separated
- 1 cup milk or 1 cup cream
- fat (for frying)
Recipe
- 1 grate raw potatoes into a bowl with cold water. squeeze through a clean cloth. add salt, flour, egg yolks and milk, and mix in stiffly beaten egg whites. drop by tblsp. fulls into a frying pan with hot fat. bacon fat is nice. fry pancakes until golden and crisp.
