Potato Pancakes

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 2 lbs raw potatoes, peeled
  • 1 tablespoon salt
  • 2 tablespoons flour
  • 3 eggs, separated
  • 1 cup milk or 1 cup cream
  • fat (for frying)

Recipe

  • 1 grate raw potatoes into a bowl with cold water. squeeze through a clean cloth. add salt, flour, egg yolks and milk, and mix in stiffly beaten egg whites. drop by tblsp. fulls into a frying pan with hot fat. bacon fat is nice. fry pancakes until golden and crisp.
