Rhubarb - Strawberry Upside Down Cake

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • 5 cups rhubarb, finely cut
  • 1/4 cup sugar
  • 1 (3 ounce) package strawberry jell-o gelatin dessert
  • 1 (18 ounce) package cake mix
  • 3 egg whites (or as called for by your cake mix)
  • 1/3 cup oil (or as called for by your cake mix)
  • 1 1/3 cups water (or as called for by your cake mix)
  • 16 ounces mini marshmallows

Recipe

  • 1 cover greased 9 x 13 pan with miniature marshmallows.
  • 2 mix rhubarb, sugar and jell-o.
  • 3 let stand while preparing cake mix according to package directions.
  • 4 pour cake mix over marshmallows, then cover with the rhubarb mixture.
  • 5 bake at 350 degrees for 45 minutes.
  • 6 turn onto serving dish.
  • 7 cool and eat.
