Rhubarb - Strawberry Upside Down Cake

Ingredients
- 5 cups rhubarb, finely cut
- 1/4 cup sugar
- 1 (3 ounce) package strawberry jell-o gelatin dessert
- 1 (18 ounce) package cake mix
- 3 egg whites (or as called for by your cake mix)
- 1/3 cup oil (or as called for by your cake mix)
- 1 1/3 cups water (or as called for by your cake mix)
- 16 ounces mini marshmallows
Recipe
- 1 cover greased 9 x 13 pan with miniature marshmallows.
- 2 mix rhubarb, sugar and jell-o.
- 3 let stand while preparing cake mix according to package directions.
- 4 pour cake mix over marshmallows, then cover with the rhubarb mixture.
- 5 bake at 350 degrees for 45 minutes.
- 6 turn onto serving dish.
- 7 cool and eat.
