Simple Cake

Ingredients
- 3/4 cup shortening
- 1 1/2 cups sugar
- 2 1/4 cups sifted cake flour
- 1 tablespoon baking powder
- 3/4 teaspoon salt
- 1 cup milk
- 1 1/2 teaspoons vanilla extract
- 5 egg whites
Recipe
- 1 cream shortening, gradually add sugar, beating well at medium speed with an electric mixer.
- 2 combine four, baking powder and salt; add to creamed mixture alternately with milk, begin and end with flour. mix after each addition. stir in vanilla.
- 3 beat egg whites ( at room temp.) until stiff peaks form. gently fold into batter.
- 4 pour batter into 2 greased and floured 9 inch round cake pans. bake at 350f for 25-30 minutes or until wooden pick inserted in center comes out clean. cool in pans 10 minutes, remove from pans, cool completely on wire rack. frost as desired.
