- 2/3 cup quinoa flour
- 1 teaspoon sea salt
- 1/4 teaspoon black pepper
- 3 large eggs, beaten
- 1 small red bell pepper, chopped
- 1 1/2 cups corn
- 1 cup cooked quinoa
- 1/2 cup packed basil leaves, chopped
- olive oil
Recipe
- 1 in a medium bowl, whisk together quinoa flour, salt, pepper and eggs. gently stir in red pepper, corn, quinoa and basil.
- 2 in large nonstick skillet, heat oil over medium heat. for each griddle cake, drop ¼ cup batter into skillet and flatten slightly.
- 3 cook for 2-3 minutes per side until browned. transfer to a plate lined with paper towels. repeat with remaining batter.
