Pineapple-banana Cake Filling

Ingredients
- 3/4 cup sugar
- 3 tablespoons cornstarch
- 1/2 cup water
- 1/2 cup pineapple juice
- 1 large banana, mashed
- 2/3 cup crushed pineapple
- 2 teaspoons lemon juice
Recipe
- 1 combine sugar and cornstarch with water and pineapple juice in medium saucepan.
- 2 cook slowly until think and smooth, stirring to prevent lumping.
- 3 mix banana, crushed pineapple and lemon juice.
- 4 add to cornstarch mixture and cook 2-3 minutes.
- 5 cool.
- 6 spread between layers of plain cake.
