Pineapple-banana Cake Filling

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • 3/4 cup sugar
  • 3 tablespoons cornstarch
  • 1/2 cup water
  • 1/2 cup pineapple juice
  • 1 large banana, mashed
  • 2/3 cup crushed pineapple
  • 2 teaspoons lemon juice

Recipe

  • 1 combine sugar and cornstarch with water and pineapple juice in medium saucepan.
  • 2 cook slowly until think and smooth, stirring to prevent lumping.
  • 3 mix banana, crushed pineapple and lemon juice.
  • 4 add to cornstarch mixture and cook 2-3 minutes.
  • 5 cool.
  • 6 spread between layers of plain cake.
