Pineapple Fruitcake

Total Time: 1 hr 5 mins Preparation Time: 5 mins Cook Time: 1 hr

Ingredients

  • Servings: 12
  • 1 (15 ounce) can crushed pineapple
  • 4 ounces butter
  • 12 ounces raisins
  • 1 cup sugar
  • 1 teaspoon mixed spice
  • 1 teaspoon bicarbonate of soda
  • 1 pinch salt
  • 1 cup self raising flour
  • 1 cup plain flour
  • 2 beaten eggs

Recipe

  • 1 put in pan crushed pineapple and juice, butter, raisins, sugar, spice, bicarbonate soda and pinch of salt.
  • 2 boil for 10 minutes, watch that it does not boil over with the bicarbonate of soda in it!
  • 3 cool and then add the beaten eggs and flours.
  • 4 put into an 8x8-inch tin that has been lined with baking paper.
  • 5 bake at 350°f for approximately 1 hour.
