Quinoa Blueberry Pancakes

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 1/2 cups quinoa, cooked
  • 1 cup milk
  • 4 eggs
  • 3 teaspoons baking soda
  • 1/4 teaspoon sea salt
  • 1 tablespoon honey
  • 2 tablespoons grapeseed oil
  • 1 1/2 cups blueberries

Recipe

  • 1 in a blender combine: quinoa, honey, oil, eggs and milk – blend till smooth. add in salt, baking powder and blend for a few more seconds.
  • 2 heat a griddle or pan with cooking spray. pour 1/4 cup of batter on to hot griddle or pan. sprinkle blueberries of the top and cook for a few minutes. flip and finish both sides until golden brown.
