Quinoa Chickpea Pancakes

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 1 cup chickpea flour
  • 1 cup water
  • 2 tablespoons tamari soy sauce
  • 1/4 teaspoon cayenne
  • 1 teaspoon ground cumin
  • 3 tablespoons red onions, grated
  • 1 cup red quinoa, cooked
  • 1/4 cup olive oil, for cooking

Recipe

  • 1 whisk together chickpea flour, water, tamari soy sauce, cayenne, cumin, and onion.
  • 2 stir in the cooked quinoa and let stand 10 minutes.
  • 3 heat 2 tablespoons of olive oil over medium heat in a frying pan and add pancakes in 1/4 cup measures. cook until dark golden brown, 1-1/2 to 2 minutes each side. add more oil as needed.
  • 4 drain on paper towels.
  • 5 serve.
