Pecan Cheesecake

Ingredients

- 1 1/2 cups graham cracker crumbs
- 2 tablespoons sugar
- 6 tablespoons butter, melted
- 5 (8 ounce) packages cream cheese, softened at room temperature
- 1 2/3 cups firmly packed light brown sugar
- 5 large eggs
- 1 teaspoon vanilla
- 1 cup chopped pecans
- ground pecans (to garnish)
Recipe
- 1 preheat oven to 325 degrees.
- 2 combine first 3 ingredients and press into a 10" springform pan.
- 3 set aside.
- 4 beat cream cheese until light and fluffy.
- 5 gradually add brown sugar, mixing well.
- 6 add eggs, one at a time, beating well after each addition.
- 7 stir in vanilla and 1 cup chopped pecans.
- 8 spoon mixture into springform.
- 9 bake at 325 degrees for one hour.
- 10 turn oven off and leave in oven for 30 minutes.
- 11 ajar oven door and leave in oven another 30 minutes.
- 12 cool at room temperature then refrigerate overnight.
- 13 top with whipped cream then sprinkle ground pecans on top.
