Pineapple Nut Carrot Cake

Ingredients

- 1 (8 ounce) can crushed pineapple
- 2 cups flour
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 4 eggs
- 2 cups sugar
- 1 1/2 cups vegetable oil
- 2 cups carrots, shredded
- 3/4 cup nuts, chopped
- 1/4 cup butter
- 1 (4 ounce) package cream cheese with pineapple
- 1 teaspoon vanilla
- 2 1/4 cups icing sugar, sifted
Recipe
- 1 drain pineapple.
- 2 combine flour, baking powder, cinnamonm soda and salt; mix well.
- 3 in large bowl, beat eggs; gradually beat in sugar and oil.
- 4 add dry ingredients; mix well. stir in pineapple, carrots and nuts.
- 5 turn into a greased and floured tube pan. bake at 350f for 60-70 minutes or until tester inserted in the center of the cake comes out clean.
- 6 let cool in pan for 25 minutes. remove from pan; let cool completely before icing.
