Pineapple Nut Carrot Cake

Ingredients

  • Servings: 10
  • 1 (8 ounce) can crushed pineapple
  • 2 cups flour
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 4 eggs
  • 2 cups sugar
  • 1 1/2 cups vegetable oil
  • 2 cups carrots, shredded
  • 3/4 cup nuts, chopped
  • 1/4 cup butter
  • 1 (4 ounce) package cream cheese with pineapple
  • 1 teaspoon vanilla
  • 2 1/4 cups icing sugar, sifted

Recipe

  • 1 drain pineapple.
  • 2 combine flour, baking powder, cinnamonm soda and salt; mix well.
  • 3 in large bowl, beat eggs; gradually beat in sugar and oil.
  • 4 add dry ingredients; mix well. stir in pineapple, carrots and nuts.
  • 5 turn into a greased and floured tube pan. bake at 350f for 60-70 minutes or until tester inserted in the center of the cake comes out clean.
  • 6 let cool in pan for 25 minutes. remove from pan; let cool completely before icing.
