Pineapple Perfection Cake

Total Time: 50 mins Preparation Time: 15 mins Cook Time: 35 mins

Ingredients

  • Servings: 24
  • 2 eggs
  • 2 cups flour (plain)
  • 2 cups sugar
  • 2 teaspoons baking soda
  • 1 teaspoon vanilla
  • 1 (20 ounce) can crushed pineapple, save juice
  • 1 cup chopped pecans (this recipe does not call for butter!!only in the icing)
  • 1 (8 ounce) package cream cheese (room temp.)
  • 1/2 cup soft butter
  • 1/2 cup chopped pecans
  • 1 3/4 cups confectioners' sugar
  • 1 teaspoon vanilla

Recipe

  • 1 combine above ingredients mix well.
  • 2 pour in a well greased 9x13 pan.
  • 3 bake at350* for 35-40 minutes frosting directions: combine above ingredients spread on cake while still warm.
  • 4 chill in refigerator.
  • 5 serve cold-- enjoy!
