Quick And Easy Citrus Buttercake

Ingredients

- 1/2 cup butter or 1/2 cup margarine
- 2 eggs
- 1 cup self raising flour
- 1/2 cup plain flour
- 1 teaspoon grated lemon rind
- 1 teaspoon grated orange rind
- 1/3 cup orange juice
Recipe
- 1 preheat oven to 190 degrees.
- 2 grease a 20cm ring tin.
- 3 place all ingredients into a small mixer bowl.
- 4 mix on low speed until ingredients are blended together.
- 5 beat on medium speed for 2 minutes.
- 6 spoon batter into a greased ring tin.
- 7 bake in preheated 190 degree oven for 35 - 40 minutes.
- 8 cool slightly in tin then iturn out onto wire rack.
- 9 when cold. dust with icing sugar and serve buttered if desired.
