Patricia's Oatmeal Cake

Ingredients

- 1 cup quick oats
- 1 1/4 cups hot water
- 1/2 cup butter
- 1 cup light brown sugar
- 1 cup granulated sugar
- 2 eggs
- 1/2 teaspoon vanilla
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup granulated sugar
- 1/4 cup butter
- 6 ounces evaporated milk
- 1/4 teaspoon maple extract
- 1/4 cup nuts, chopped
- 1/4 cup coconut
Recipe
- 1 pour hot water over oats, butter and sugars. cool.
- 2 add eggs and vanilla.
- 3 sift dry ingredients together and add. mix well.
- 4 bake at 350 for 35-40 minutes in a tube or bundt pan. may also be baked in a 9x13 cake pan but frosting recipe should be doubled.
- 5 frosting:.
- 6 stir and cook sugar, butter, and milk over medium heat to very soft ball stage. cool.
- 7 beat for several minutes until frosting consistancy is achieved. add nuts and coconut.
