Ingredients
- 1 1/4 cups jiffy pancake mix
- 2 eggs
- 2 cups finely shredded uncooked potatoes (well drained)
- 1 teaspoon salt
- 1 tablespoon butter
Recipe
- 1 melt butter in 325° skillet.
- 2 blend all ingredients thoroughly.
- 3 drop dough onto skillet and fry pancakes on each side until golden brown.
- 4 serve while still hot.
