Simple Rhubarb Cake

Total Time: 55 mins Preparation Time: 20 mins Cook Time: 35 mins

Ingredients

  • 1/2 cup sugar
  • 1 cup brown sugar
  • 1/2 cup shortening
  • 1 egg
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1 cup sour milk (or buttermilk)
  • 2 cups flour
  • 2 cups rhubarb, chopped
  • cinnamon-sugar mixture, to sprinkle top of cake

Recipe

  • 1 preheat oven to 350 degrees; grease 9x13 inch pan.
  • 2 cream together both sugars and shortening.
  • 3 add egg and mix together.
  • 4 mix in all remaining ingredients and pour into prepared pan.
  • 5 sprinkle with a little cinnamon and sugar.
  • 6 bake for 35 minutes or until toothpic comes out clean.
