Swedish Macaroon Tea Thimbles

Total Time: 55 mins Preparation Time: 30 mins Cook Time: 25 mins

Ingredients

  • Servings: 24
  • 1 cup butter, softened
  • 1/2 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 2 cups cake flour, sifted
  • 2 eggs
  • 1/2 cup sugar
  • 1 1/4 cups blanched almonds, ground
  • 1/2 teaspoon almond flavoring

Recipe

  • 1 for the crusts, cream thoroghly butter and sugar. beat in egg and vanilla. stir in flour.
  • 2 drop rounded teaspoonfuls into greased mini muffin cups.
  • 3 press dough over bottom and around sides making a cup about 1/4 inch thick. leave center hollow. chill.
  • 4 heat oven to 325 degrees. assemble filling.
  • 5 in a bowl, beat eggs until light and foamy.
  • 6 gradually beat in sugar until well blended.
  • 7 mix in almonds and almond flavoring.
  • 8 remove cups from refrigerator and spoon filling into hollows.
  • 9 bake 25-30 minutes until delicately browned and set.
  • 10 cool.
