Orange Upside-down Cake

Total Time: 55 mins Preparation Time: 20 mins Cook Time: 35 mins

Ingredients

  • Servings: 8
  • 1/4 cup shortening
  • 3/4 cup sugar, plus
  • 2 tablespoons sugar, divided use
  • 3/4 teaspoon vanilla
  • 2/3 cup milk
  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 egg
  • 1/4 cup butter
  • 3/4 cup brown sugar
  • 3 oranges

Recipe

  • 1 cream shortening, sugar, vanilla and 2 tbl milk together until light and fluffy.
  • 2 blend in egg yolk.
  • 3 sift dry ingredients together and add alternately with remaining milk.
  • 4 beat egg until frothy and add 2 tbl sugar.
  • 5 beat until a meringue in formed and fold into cake batter.
  • 6 melt butter and combine with brown sugar in a 9 inch cake pan.
  • 7 peel and section oranges, removing all membrane.
  • 8 arrange over brown sugar mixture and pour batter over top.
  • 9 bake at 350* for 35-40 minutes.
  • 10 remove from pan immediately, fruit side up.
  • 11 serve hot or cold.
