Sarah's Caramel Apple Cake

Total Time: 1 hr 50 mins Preparation Time: 20 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 12
  • 2 cups sugar
  • 1 1/2 cups oil
  • 1 lemon, juice of
  • 2 teaspoons vanilla
  • 2 eggs, beaten
  • 3 cups flour
  • 1 1/4 teaspoons baking soda
  • 1 teaspoon salt
  • 3 cups apples, chopped
  • 1 cup nuts
  • 1 cup brown sugar
  • 1/2 cup butter
  • 1/4 cup milk
  • 2 teaspoons vanilla

Recipe

  • 1 cream the sugar, oil, lemon juice, vanilla and eggs together. add the dry ingredients.
  • 2 fold in the apples and nuts.
  • 3 bake in a greased and floured 9x13 inch pan for 1 1/2 hours at 325 degrees - start checking the cake at 60 minutes to check for doneness and after that in 10 minute intervals.
  • 4 to make frosting: pour all ingredients into a saucepan and bring to a boil. boil for an additional 2-3 minutes - stir constantly!
  • 5 pour the frosting over the hot cake - i let it cool just a bit before pouring the frosting on.
