Sarah's Lemon Cake

Ingredients

- 1 lemon
- 200 g caster sugar
- 250 g self raising flour
- 1 pinch salt
- 1 teaspoon baking powder
- 250 g softened unsalted butter
- 4 large eggs
- 150 g caster sugar
- 1 lemon, juice of
Recipe
- 1 preheat your oven to 160c.
- 2 line an 18cm round cake tin with baking paper.
- 3 zest and juice the first lemon.
- 4 pulverise zest with sugar in a food processor.
- 5 sift flour with salt and baking powder and add with butter and eggs to food processor.
- 6 process'til smooth.
- 7 pour mixture into prepared tin, then smooth top and bake for 1 1/2 hours.
- 8 to make the syrup, mix the sugar and lemon juice.
- 9 turn the hot cake out onto a serving dish and spoon the syrup over.
- 10 leave to cool and serve with thick cream.
