Sarah's Lemon Cake

Total Time: 1 hr 40 mins Preparation Time: 10 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 6
  • 1 lemon
  • 200 g caster sugar
  • 250 g self raising flour
  • 1 pinch salt
  • 1 teaspoon baking powder
  • 250 g softened unsalted butter
  • 4 large eggs
  • 150 g caster sugar
  • 1 lemon, juice of

Recipe

  • 1 preheat your oven to 160c.
  • 2 line an 18cm round cake tin with baking paper.
  • 3 zest and juice the first lemon.
  • 4 pulverise zest with sugar in a food processor.
  • 5 sift flour with salt and baking powder and add with butter and eggs to food processor.
  • 6 process'til smooth.
  • 7 pour mixture into prepared tin, then smooth top and bake for 1 1/2 hours.
  • 8 to make the syrup, mix the sugar and lemon juice.
  • 9 turn the hot cake out onto a serving dish and spoon the syrup over.
  • 10 leave to cool and serve with thick cream.
