Nummy Raspberry Bars

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • 1 1/2 cups whole wheat flour (you can also use regular flour)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup brown sugar, packed
  • 3/4 cup butter
  • 1 1/2 cups oats
  • 1 cup raspberry jam
  • 1/2 cup sliced almonds
  • icing sugar (optional)

Recipe

  • 1 combine flour, baking powder, salt and brown sugar in mixing bowl.
  • 2 stir well to blend.
  • 3 cut in butter until mixture is crumbly.
  • 4 stir in oats.
  • 5 press about 2/3 of crumb mixture into lightly greased 13" x 9" cake pan.
  • 6 spread with raspberry jam.
  • 7 add almonds to remaining crumb mixture and sprinkle over jam.
  • 8 pat down lightly.
  • 9 bake at 375°f for 30-35 minutes or until golden.
  • 10 cool.
  • 11 cut into bars.
  • 12 just before serving, sprinkle with icing sugar, if desired.
