Puffy Pancake With Banana-berry Compote

Ingredients

- 4 large eggs
- 1 cup all-purpose flour
- 1 cup milk
- 2 tablespoons granulated sugar
- 1/4 teaspoon salt
- 2 tablespoons butter
- 2 ripe bananas, each cut into 1/2 inch chunks
- 1 pint strawberry, sliced
- 1 tablespoon granulated sugar
- 1 tablespoon lemon juice
- confectioners' sugar
Recipe
- 1 preheat oven to 425ºf.
- 2 prepare pancake: place 10-inch skillet with oven-safe handle in oven; heat until very hot. in blender, at medium speed, blend eggs, milk, flour, sugar, and salt until smooth.
- 3 remove skillet from oven; add butter and swirl until melted. pour batter into hot skillet; bake until puffy and golden, 15 minute.
- 4 meanwhile, prepare comote: in bowl, toss bananas and berries with sugar and lemon juice.
- 5 spoon compote onto pancake; sprinkle with confectioner's sugar. to serve, cut into wedges.
