Pancake Muffins (aunt Jemima Recipe)

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 2 cups aunt jemima whole wheat blend pancake mix
  • 1/2 teaspoon ground cinnamon
  • 2/3 cup 2% low-fat milk (i used skim)
  • 1/3 cup honey
  • 1 egg, slightly beaten
  • 1/4 cup vegetable oil (i used olive oil because that's all i had)
  • 1 teaspoon vanilla extract

Recipe

  • 1 preheat oven to 425.
  • 2 spray 12 muffin cups with nonfat cooking spray or line with paper baking cups.
  • 3 combine pancake mix and cinnamon in medium bowl.
  • 4 combine honey, egg, oil, milk and vanilla in small bowl with wire wisk; add to dry mixture. mix just until dry ingredients are moistened.
  • 5 fill muffin cups 3/4 full. bake 15-18 minutes or until toothpick comes out clean (i baked 15 minutes and they were a little dry. next time will check after 13 minutes).
  • 6 cool 2 minutes in pan. remove to cooling rack.
