Scandinavian Bacon And Egg Cake

Ingredients

- 3/4 lb bacon, sliced
- 6 eggs
- 2/3 cup half-and-half
- 1 1/2 tablespoons flour
- 1 tablespoon dill, chopped
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chives, sliced
Recipe
- 1 fry bacon until nearly crisp. remove and drain on paper towels. reserve 1 t bacon grease.
- 2 whish together eggs, half and half, salt and pepper.
- 3 heat bacon grease in skillet. add eggs and reduce heat to very low.
- 4 let eggs cook until a firm custardy consistency. it will take about 20 minute.
- 5 don't let the bottom burn.
- 6 lay bacon strips across top or chop bacon and sprinkle around top.
- 7 sprinkle with dill and chives or you can use sliced green onion tops.
- 8 cut in wedges to serve.
