Scandinavian Bacon And Egg Cake

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 3/4 lb bacon, sliced
  • 6 eggs
  • 2/3 cup half-and-half
  • 1 1/2 tablespoons flour
  • 1 tablespoon dill, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chives, sliced

Recipe

  • 1 fry bacon until nearly crisp. remove and drain on paper towels. reserve 1 t bacon grease.
  • 2 whish together eggs, half and half, salt and pepper.
  • 3 heat bacon grease in skillet. add eggs and reduce heat to very low.
  • 4 let eggs cook until a firm custardy consistency. it will take about 20 minute.
  • 5 don't let the bottom burn.
  • 6 lay bacon strips across top or chop bacon and sprinkle around top.
  • 7 sprinkle with dill and chives or you can use sliced green onion tops.
  • 8 cut in wedges to serve.
