Pineapple Cream Cheese Cake

Ingredients

- 1 1/2 cups sugar
- 2 cups flour
- 2 eggs
- 2 teaspoons baking soda
- 1 teaspoon vanilla
- 1 (20 ounce) can crushed pineapple with juice
- 1/2-1 cup chopped macadamia nuts (optional)
- 1/2 cup butter
- 8 ounces cream cheese
- 1 3/4 cups powdered sugar
- 1 teaspoon vanilla
- shredded coconut (optional)
Recipe
- 1 mix all cake ingredients.
- 2 pour into a 13x9" greased pan.
- 3 bake at 350°f for about 40-45 minutes.
- 4 mix together frosting ingredients.
- 5 let cake cool, then frost.
- 6 note: try adding some sweetened shredded coconut to frosting.
