Potato Pancakes

Ingredients
- 1/4 cup shortening
- 2 eggs
- 1/4 cup milk
- 2 cups finely shredded raw potatoes, well drained and squeezed to get moisture out
- 1/4 cup bisquick
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon garlic powder
Recipe
- 1 melt shortening in large skillet. beat eggs with whisk until fluffy; stir in milk, potatoes, baking mix, salt, pepper and garlic powder. drop mixture by tablespoonfuls into hot shortening. cook about 3 minutes on each side or until golden brown. serve with grilled franks, coleslaw and apricot jam cake.
