Potato Pancakes

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 1/4 cup shortening
  • 2 eggs
  • 1/4 cup milk
  • 2 cups finely shredded raw potatoes, well drained and squeezed to get moisture out
  • 1/4 cup bisquick
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder

Recipe

  • 1 melt shortening in large skillet. beat eggs with whisk until fluffy; stir in milk, potatoes, baking mix, salt, pepper and garlic powder. drop mixture by tablespoonfuls into hot shortening. cook about 3 minutes on each side or until golden brown. serve with grilled franks, coleslaw and apricot jam cake.
