Prune Cake

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • 2 cups flour
  • 1 pinch salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon allspice
  • 1 teaspoon nutmeg
  • 1 1/2 cups sugar
  • 1 cup cooking oil
  • 1 cup buttermilk
  • 3 eggs
  • 1 teaspoon vanilla
  • 1 cup nuts, chopped
  • 1 cup prune, chopped
  • 1 cup sugar
  • 1/2 cup buttermilk
  • 1/2 teaspoon vanilla
  • 1 tablespoon light corn syrup
  • 1/2 cup butter

Recipe

  • 1 mix together first 6 ingredients.
  • 2 set aside.
  • 3 mix sugar, oil, buttermilk, eggs and vanilla.
  • 4 stir dry mixture into the wet mixture.
  • 5 fold in nuts and prunes.
  • 6 grease a tube pan and line with parchment paper.
  • 7 bake 1 hour and 15 minutes at 350 degrees.
  • 8 cool for 15 minutes and remove from pan.
  • 9 mix glaze ingredients together and cook over medium heat.
  • 10 stir constantly until glaze turns a caramel color.
  • 11 pour over cake.
