Old Fashioned Rhubarb Cake

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 15
  • 1/2 cup butter or 1/2 cup margarine
  • 2 cups sugar, divided
  • 1 egg, beaten
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sour milk or 1 cup buttermilk
  • 2 cups rhubarb, chopped and floured
  • 1 tablespoon vanilla
  • 1 teaspoon cinnamon
  • 1/4 cup butter

Recipe

  • 1 toss chopped rhubarb in some flour.
  • 2 cream butter and 1 1/2 c sugar. add egg, beat well.
  • 3 sift dry ingredients, add alternately with milk to creamed mixture.
  • 4 gently blend in rhubarb and vanilla.
  • 5 pour into a 9x13 pan.
  • 6 mix remaining 1/2 c sugar with cinnamon and butter until crumbly.
  • 7 sprinkle over batter.
  • 8 bake in a 350 degree oven for 40-45 minutes. test for doneness.
