Old Fashioned Rhubarb Cake

Ingredients

- 1/2 cup butter or 1/2 cup margarine
- 2 cups sugar, divided
- 1 egg, beaten
- 2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup sour milk or 1 cup buttermilk
- 2 cups rhubarb, chopped and floured
- 1 tablespoon vanilla
- 1 teaspoon cinnamon
- 1/4 cup butter
Recipe
- 1 toss chopped rhubarb in some flour.
- 2 cream butter and 1 1/2 c sugar. add egg, beat well.
- 3 sift dry ingredients, add alternately with milk to creamed mixture.
- 4 gently blend in rhubarb and vanilla.
- 5 pour into a 9x13 pan.
- 6 mix remaining 1/2 c sugar with cinnamon and butter until crumbly.
- 7 sprinkle over batter.
- 8 bake in a 350 degree oven for 40-45 minutes. test for doneness.
