Rhubarb Upside Down Cake

Ingredients

  • Servings: 8
  • 2 tablespoons butter
  • 1 cup brown sugar
  • 2 cups diced rhubarb
  • 1/4 cup shortening
  • 1 cup sugar
  • 1 egg
  • 2 cups flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk

Recipe

  • 1 melt butter in a skillet.
  • 2 add brown sugar and diced rhubarb.
  • 3 to make the batter, cream shortening and sugar together.
  • 4 add egg and beat.
  • 5 sift flour; add baking powder and salt, sift again.
  • 6 sift dry ingredients together and add alternately with milk.
  • 7 pour batter over rhubarb and bake at 375 degrees for 40 to 45 minutes.
  • 8 turn upside down on plate to serve.
  • 9 serve with cream.
