Rhubarb Upside Down Cake

Ingredients

- 2 tablespoons butter
- 1 cup brown sugar
- 2 cups diced rhubarb
- 1/4 cup shortening
- 1 cup sugar
- 1 egg
- 2 cups flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
Recipe
- 1 melt butter in a skillet.
- 2 add brown sugar and diced rhubarb.
- 3 to make the batter, cream shortening and sugar together.
- 4 add egg and beat.
- 5 sift flour; add baking powder and salt, sift again.
- 6 sift dry ingredients together and add alternately with milk.
- 7 pour batter over rhubarb and bake at 375 degrees for 40 to 45 minutes.
- 8 turn upside down on plate to serve.
- 9 serve with cream.
