Rhubarb Upside Down Cake

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 2 tablespoons butter
  • 1 (9 ounce) box yellow cake mix
  • 1 egg
  • 1/2 cup cold water
  • 1 cup brown sugar
  • 2 cups diced rhubarb

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 melt butter in bottom of 9" baking dish sprayed with nonstick cooking spray.
  • 3 make cake per package directions. set aside.
  • 4 sprinkle brown sugar in bottom of baking pan.
  • 5 place diced rhubarb on top of brown sugar.
  • 6 pour cake batter over rhubarb.
  • 7 bake at 350 degrees for 30-35 minutes.
  • 8 serve warm with ice cream or whipped cream.
  • 9 note: fresh or frozen rhubarb can be used. if using frozen, just thaw first but do not squeeze water out.
