Rhubarb Upside Down Cake

Ingredients
- Servings: 6
- 2 tablespoons butter
- 1 (9 ounce) box yellow cake mix
- 1 egg
- 1/2 cup cold water
- 1 cup brown sugar
- 2 cups diced rhubarb
Recipe
- 1 preheat oven to 350 degrees.
- 2 melt butter in bottom of 9" baking dish sprayed with nonstick cooking spray.
- 3 make cake per package directions. set aside.
- 4 sprinkle brown sugar in bottom of baking pan.
- 5 place diced rhubarb on top of brown sugar.
- 6 pour cake batter over rhubarb.
- 7 bake at 350 degrees for 30-35 minutes.
- 8 serve warm with ice cream or whipped cream.
- 9 note: fresh or frozen rhubarb can be used. if using frozen, just thaw first but do not squeeze water out.
