Peanut Butter & Jelly Cupcakes Or Icing

Total Time: 45 mins Preparation Time: 30 mins Cook Time: 15 mins

Ingredients

  • 2 cups unsalted butter, softened
  • 1 cup peanut butter
  • 16 ounces jelly or 16 ounces pie filling
  • 16 ounces confectioners' sugar
  • 1 teaspoon vanilla

Recipe

  • 1 prepare, bake, and cool cupcakes.
  • 2 on medium-high speed, beat butter until fluffy. add vanilla. beat in peanut butter, then jelly, then confectioners sugar until smooth.
  • 3 spoon 1 1/4 c mixture into frosting bag. snip 1/4" hole in one corner. insert bag tip 1" into center top of each cupcake. squeeze 1 tbs frosting into each.
  • 4 spread remaining mixture over cupcakes.
  • 5 optional: garnish with crushed peanuts or peanut butter mini-chips.
