Perfect Potato Cakes - Jackie French

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 medium potatoes, grated
  • 1 small onion, grated
  • 4 tablespoons plain flour
  • 2 eggs
  • parsley, chopped
  • chives, chopped
  • salt, pepper
  • oil (for frying)
  • ham (optional)
  • grated carrot (optional)
  • tuna (optional)
  • garlic (optional)

Recipe

  • 1 combine all ingredients except oil.
  • 2 fry small spoonfuls in olive oil till brown on both sides.
  • 3 serve hot.
  • 4 nb/ each potato cake should be small & thin so the potato & onion cook properly.
