Rhubarb Upside Down Cake

Ingredients

- 1/2 cup butter
- 1 1/2 cups sugar
- 2 eggs, well beaten
- 3 cups flour
- 4 teaspoons baking powder
- 1 cup milk
- 1 teaspoon vanilla
- 1 pinch salt
- 4 cups rhubarb, cut in 1/2 inch pieces
- 1/2 cup sugar
- 1 (3 ounce) package strawberry jell-o gelatin dessert (just your normal jello in a box)
- 1/4 cup flour
- 1/2 cup sugar
- 3 tablespoons butter
Recipe
- 1 mix all cake ingredients and spread into a greased 9x13 pan.
- 2 mix all the fruit filling ingredients and spread over cake batter.
- 3 mix all streusel topping ingredients and sprinkle on fruit.
- 4 bake this cake at 375f for 35 to 40 minutes making sure the streusel topping is nicely browned.
