Rhubarb Upside Down Cake

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 12
  • 1/2 cup butter
  • 1 1/2 cups sugar
  • 2 eggs, well beaten
  • 3 cups flour
  • 4 teaspoons baking powder
  • 1 cup milk
  • 1 teaspoon vanilla
  • 1 pinch salt
  • 4 cups rhubarb, cut in 1/2 inch pieces
  • 1/2 cup sugar
  • 1 (3 ounce) package strawberry jell-o gelatin dessert (just your normal jello in a box)
  • 1/4 cup flour
  • 1/2 cup sugar
  • 3 tablespoons butter

Recipe

  • 1 mix all cake ingredients and spread into a greased 9x13 pan.
  • 2 mix all the fruit filling ingredients and spread over cake batter.
  • 3 mix all streusel topping ingredients and sprinkle on fruit.
  • 4 bake this cake at 375f for 35 to 40 minutes making sure the streusel topping is nicely browned.
