Super Simple Pineapple Cake

Total Time: 50 mins Preparation Time: 5 mins Cook Time: 45 mins

Ingredients

  • 2 cups flour
  • 1 1/2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 (20 ounce) can crushed pineapple
  • 1/2 cup coconut flakes
  • 1/2 cup brown sugar
  • 1/4 slice margarine
  • 1/4 cup sugar
  • 1/8 cup milk
  • 1/2 teaspoon vanilla extract

Recipe

  • 1 mix the dry ingredients for the cake.
  • 2 stir in the eggs and pineapple.
  • 3 pour the mixture into a 9x13 pan.
  • 4 sprinkle the coconut and brown sugar over the top.
  • 5 bake at 350 degrees for 40 min--or until cake is slightly browned on top and passes the "toothpick test".
  • 6 once the cake is out of the oven, mix all of the syrup ingredients in a saucepan and bring to a boil.
  • 7 pour hot mixture over the warm cake.
  • 8 make sure you let the cake sit for a few minutes to let the syrup get completely absorbed before serving.
